Pad See Ew

The first flakes started falling outside of our windows. . . And I wanted to make something tasty and warm. So, I put together some pad see ew, one of She’s favorite dishes. A nice surprise by any measure.

I started with assistance from here:  I highly recommend ChezPim as an excellent resource for Thai cooking technique and ideas. Very helpful AND tasty.

Start with a well seasoned wok. Note: this is not the same as a dirty wok. Unfortunately, this means I will need to properly season next time around, because I could NOT get my ingredients sufficiently hot enough.

Marinate protein (commie tofu) with fish sauce, chilli sauce, oyster sauce.

Soften the noodles. Now, my source recommended using lukewarm water if the noodles aren’t fresh. I think a bit of boiling might have helped things along. Rice noodles ought not be as al dente as these were.

Stir fry some veggies in super heated oil, add thickened soy sauce.

Wipe wok, repeat with protein. Wipe wok, repeat with noodles and then add everything back in.

Quite tasty. And it made everyone quite happy.
